Richard sent us a recipe for his favourite pudding – St Clement’s Cheesecake:
2 large packets of branded soft cheese (!)
1 tin of condensed milk
9oz crushed digestives
3oz butter
Fresh lemons and oranges
Melt the butter and add the crushed biscuits. Place in a flan dish and smooth with the back of a spoon. Place in fridge until set. Mix the cheese and milk together. Slowly add juice from the oranges and lemons to tasts, but not runny. Spread this mixture over the biscuit base and set in fridge. YUMMY!!

Bottomley Potato Pie: Scoop out the inside of a potato; mix with anything (my favourite is Bovril and herbs); refill, cover with cheese and grill or bake: eat with raw salad and carrot fingers.

Broccoli Pasta
Fry up to 4 chopped cloves of garlic in a generous amount of olive oil. Be careful not to burn them. Add 1 to 2 tins of anchovies stirring continuously until they ‘dissolve’ in the oil. Add par boiled broccoli florets and mix into the sauce. Toss into al dente cooked spaghetti and serve with lots of parmesan cheese.

Roast parsnips and potatoes cooked in goose fat, and cauliflower cheese, or whichever vegetables he has in his allotment! Followed by creme caramel (made with his own eggs!) with a little pouring cream. Sounds delicious!
